No Bake Single Serve Chocolate Cream Berry Pie

Just in time for the Fireworks! A single serve no bake Chocolate Cream pie with berries. Ok, so it doesnt exactly look like fireworks, maybe somewhat of a flower 🙂 Have a safe 4th. Keep your pets safe too.

Sneaking a post in just in time for the weekend. I am tired of this cold already. Some heat is predicted over the next few days. Time to pick up some sun screen and stop taking pictures of food.
 
 
 

No Bake Single Serve Chocolate Cream Berry Pie - Fireworks Pie

Ingredients 
 

Crust:

  • 1/4 cup vegan chocolate chips
  • 2 Tablespoons ground almonds, Or coconut flakes for nut-free version
  • 2 Tablespoons coconut flakes
  • 1 teaspoon almond milk or non dairy milk
  • chocolate liqueur or rum extract, optional

Cream:

  • 2-3 Tablespoons So delicious coconut milk yogurt or Cashew cream
  • a generous pinch of cinnamon
  • 1 teaspoon ground raw sugar or maple syrup or sweetener of choice

Topping:

  • Sliced strawberries
  • Blackberries or blueberries

Instructions 

  • Melt the chocolate in a double boiler or microwave. Add in almond milk, liquor extract, or spices of choice and mix well.
  • Add the ground almonds and coconut flakes and mix to distribute.
  • Pour the mixture into a tart/pie pan and spread evenly.
  • Place pan in the freezer for 15 minutes.
  • In a bowl, mix yogurt, sugar and spices of choice.
  • Slice strawberries and keep ready.
  • Take the pan out and spread the spiced yogurt on top.
  • Top with sliced berries. Make a flag or an exploding firework display.
  • Freeze for half an hour just to firm up the yogurt. Serve.

      haha. we are just about getting heated up, so the oven might go in hibernation soon. so lots more no bake experiments to come!

      thats what is my problem with all these no bake things, pies, truffles etc. Most days i would just eat the dough!

    so delish… you are lucky to get the vegan stuff there. if i have to make these, i will first have to make the curd, then make the almond milk and then make the dessert…. so much work…

      yup. it definitely makes it easier. you can substitute either water or water mixed well with powdered cashew for most baked goods when it calls for non dairy milk. For the yogurt, i have to start making some of my own too. you know, we dont even get fresh coconuts here. i reckon you have plenty there 😉
