Turn this vegan and gluten free berry granola into tasty bars! Jump to Recipe

Its sunny out today.. its sunny out today! (this is what happens to Seattle people when the sun comes out) .. So you know this is going to be a short post 😉

There are berries and berries around. Use any of your fave berries for this granola. Add up or change the nuts, spices and make it your fave summer granola!
Unfortunately, this is chocolate free..:D. Eat as is, with almond milk, greek coconut milk yogurt, or make granola bars.

I had my dentist appointment(me= one side puffy numb lip).. always so expensive! uncomfortable and darn my teeth. If someone knows a magic potion to help keep cavities at bay, please pass it on to me.. my teeth are genetically wired to get loads of them. bet that creates great work for the dentists around.
I am going to give Krya’s toothpowder a try. The good old herbs used by the great grand and grand generation now being researched again. Read up on what could be the problem with toothpastes, brushes and current practices on Krya’s blog.

Mixed and ready to bake.

Baked..

I used Watermelon seeds in this granola. You can use other seeds as well. Watermelon seeds or Magaz are a great source of Iron, and fat! Yes, they have 79% fat, with 50% saturated. If you cannot use cashews or nuts for creamy curries, dips or cheese, try some melon seed kernels. You can find Watermelon or other melon seed kernels in Indian stores. If you see them anywhere, do let me know.

Lightly roasted Watermelon seed kernels. Back home, we used to eat Cantaloupe/Musk melon seed kernels as snack in summer. The melon seeds are washed and dried in sunlight, then hulled. All the kids would sit together, peel/hull the seeds and eat them.

Ingredients

  • 1/2 cup Oats
  • 1/2 cup brown rice krispies
  • 1/4 cup Almond slivers
  • 1/4 cup chopped Walnuts
  • 1/4 cup cranberries
  • 1/4 cup raisins/dried blueberries/goji berries
  • 1/4 cup Watermelon Seeds, Magaj or sunflower seeds
  • 2 Tablespoons sesame seeds
  • 1/4 teaspoon spices of choice, I added a pinch of cinnamon and ginger
  • a few drops of stevia or a Tablespoon of raw sugar powdered, optional, for sweeter
  • a generous pinch of salt
  • 1 Tablespoon Agave syrup
  • 1 teaspoon virgin coconut oil, melted
  • 1/3 cup berry puree

For bars:

  • 1/4 cup Oats flour
  • Berry Puree as needed, 1/4+ cup

Instructions

  • Puree a cup of berries of choice, without water and keep aside. I used Blueberries and Strawberries.
  • In a large bowl, add all the dry ingredients and mix for a few seconds.
  • In a saucepan, heat 1/3 cup berry puree and combine coconut oil, agave, sugar and salt.
  • Heat till just about a boil.
  • Add this to the dry. Mix well. Add more berry puree if needed.(It depends on the berries and the moisture content.)
  • Spread the mixture on parchment lined tray.
  • Bake in preheated 350 degrees F for 10 minutes.
  • Mix it up bit, rotate the baking tray, and bake for another 5 minutes.
  • Remove from oven, and press lightly with spatula to get the granola to stick.
  • Cool completely before storing.

For the granola bars

  • Add Oat flour and berry puree to the granola. Add enough puree to wet the granola so it sticks easily.
Press the mixture into a pan. Press evenly and well.
Bake in preheated oven for 15-20 minutes or until dry in the center.

yeah we got 4, 1 was not ripe enough so went in a smoothie. the other 3 were kept to ripen. 2 when opened were black. the one had just a small black area, so we managed to eat 3/4 of it. it looks good but isnt as tasty. mango envy!!

What fabulous muesli (that’s what we call it in Australia)! I love how little refined sugar and fat you’ve added. I also love the use of berry puree to sweeten, brilliant! I’m determined to not buy muesli at the shops anymore. With this new recipe in my arsenal that should be easily achieved. 🙂
    Thank you!

  6. Andrea says:

The granola looks so beautiful. I think you accomplished a lot, considering how nice the weather was today! I’ve never heard of eating watermelon seeds — are they just ordinary watermelon seeds? Are they processed in a special way?

    1. Richa says:

Thank Andrea.:) Any melon seeds will work. We used to eat a lot of musk melon while growing up. We Washed and dried the melons seeds in the sun, then removed the hull and ate the kernels. quite a cumbersome process, but the kids had a ton of free time and energy through the summer vacation:)

Thanks for the info about Krya’s blog. I have refused to get fillings for years. About 10 years ago I switched dentists, and he gave me an x-ray and said I needed 3 fillings. After saying this, I replied that it would be wise to let them re-minerlize, but he still insisted that I get at least 1 filling, but I refused. Two years later he gave me another x-ray and said I have no cavities. So now I don’t even bother getting x-rays, but I still see the dental hygienist.

    1. Richa says:

wow, that is awesome. i have had more fillings than i have teeth:) i need to rethink this type of dentistry.

I don’t think this granola needs chocolate Richa 😉 It looks scrumptious on it’s own! I love how you turned it into granola bars too!

Now go out an enjoy that beautiful weather!

    1. Richa says:

I was too sore to do much. went out with my pom and played a lot of fetch in the sun! he doesnt seem to be tired though, his energy level is up because of the sunny day too.

  10. Caitlin says:

i love how little sugar is in the granola and bars! and the color is so awesome! even though there isn’t any chocolate, it sure looks like there is!

and that’s a shame about the dentist and cavities :/ i’m lucky that i don’t ever get cavities. but one of my good friends gets cavities no matter what- and she brushes and rinses after every meal AND flosses! some people just have delicate teethies..

    1. Richa says:

If you use ripe berries, you wont need much sugar.
yeah i have delicate teethies, courtesy my genes:)
