Today, 8 years ago, my life completely changed. Though I wouldn’t know how much until a few weeks later. It took years to stop fighting and trying to find reasons, diagnosis, prognosis and just accept things and let them heal and move at their own pace. Everyday I still deal with balance, reading, vertigo, other related issues. In the first few years post the event, I would have spiraled down into deep depression, but I didn’t thanks to my amazingly resilient and supportive husband, and family. I started the blog to keep me occupied and slowly realized my love for cooking and creating in the kitchen. Every year I grow at my own pace. There are always newer roadblocks, but eventually we get through them. 

This year, I am as always thankful for my Husband. I am thankful for this blog, because it gave me something to do, for you the readers for following me along, and liking what I create. Thank you for being a part of my life. You wouldn’t know how some of the comments cheer me up on the not so good days when I can barely stand in the kitchen or edit or do anything worthwhile. 

I am thankful for the response to my Book! Its an understatement that I was blown away by all the love! I think I am always wary of good things in my life. It comes with the anxiety issues, the feeling that everything will go away again. But if that happens, we will figure something else out. 🙂

All Vegan, Awesome and delicious. Most generally low fat, baked, use whole ingredients, no Palm oil. There are plenty of Gluten-free(GF) and Soy-free(SF) and grain-free options.

Below are my favorite Sanctuaries that have had to work against the tide and keep working tirelessly for animals and people. Please keep these sanctuaries in mind forHoliday Donations. 

WildlifeSOS, is an amazing organization. They stand out for the consistent efforts towards helping wildlife, and genius solutions like providing an alternate training and lifestyle to the kalandar dancing bear community, so that the people can find other methods of earning and living rather than hunting for baby bears again when their dancing bears were taken to the sanctuary.

Currently, they have been in the news for helping Over-worked and illegally owned elephants and helping to get then to the sanctuaries. Elephants that have never known freedom for 4o to 50 years since their birth, are used as begging elephants, are always tortured, shackled, beaten by all the several owners they have had over the years. Some of those Elephants are now in the sanctuaries learning to trust humans again and living a free life.

VSPCA, I cannot really fathom how everyone here does it day in and day out. They take in all the cows and calfs that are dumped as unusable, they rehabilitate domestic animals as well wild animals and birds like parrots, ducks, turtles. They house discarded hens, pigs and any farm animals. And they also serve vegan meals to the homeless, educate and spread the word. 

VSPCA also invests in self sustaining infrastructure so that the 1000 and more animals can live their lives peacefully. They recently went through a cyclone and currently are rebuilding and caring for all those animals through the pounding storms. I am always amazed by the selfless work of all the volunteers and workers at VSPCA and they always wil be an organization that I support. 

Yes, that is Phil Wollen visiting the sanctuary. He is one of the supporters of the Kindness Farm at the sanctuary.

    Thank you much for updating us on your health, I am so sorry you still suffer those symptoms. Youre a very strong woman with a warm gentle heart. I also suffer from vertigo, attend vestibular therapy, have Celiacs/IBS, & recently had my first kidney infection and stone..Thank you for bringing joy to us, especially on those days you can’t stand, on those days youre too weak..your blog and recipes gave me strength to keep on in life, even on those days I could not stand to cook for myself..I became veg when I met my Hindu boyfriend & stumbled on your blog, with your delicious recipes..Sometimes God gives us difficulties in life to be a blessing and truly inspirational for others, and ultimately change the world. That is what you have done to each and every one of your followers =). God bless you & your family, & may you feel better soon!

    I have been following your blog for a while, but it is only today that I learned that you had a meningioma removed. I had a craniotomy in 2009 to remove mine. Mine was malignant, but thanks to God, I have been healthy for 5 years now. Eating a healthy diet is key to remaining healthy! Thanks for your recipes.

    P.S. Mmm – looking at the Triple Layer Chocolate Mousse Cake recipe – would it work with coconut oil instead of cocoa butter? Cocoa butter is hard to find here, and when I have seen it, it has been ridiculously expensive.

      hmm coconut oil would make it taste quite coconutty. use vegan butter + coconut oil.

    I was wondering…would you consider doing a gluten free vegan buckwheat flour bread that is sourdough instead of yeast? I’ve never found one though I did see a video where such a buckwheat bread was made in conjuction with a museum project…sorry I don’t have the name or link…so I know it can be done …and you definitely have the bread baking skills to make it a reality for many of us to enjoy 🙂 Be well …and may all beings have peace.
