Vegan Spiced Apple Cake with Salted Caramel. Tried tested and loved. All whole grain made with spelt flour and drizzled with salted caramel or date caramel. Makes 1 8 inch cake pan
It is finally getting sunny in the Northwest and warm.. oh so nicely warm. I gave an ultimatum to hubbs to take time off his crazy work hours(most days I see him at 8 pm). There is only so many weeks of beautiful sunny and warm weather. Then it will get too hot and then it will get rainy again.. I think we should declare summer vacation in the Northwest for everyone. 🙂

I can never make pretty cakes with pretty frosting or icing. a- I am just not patient enough and good at the whole frosting/piping/icing process and b- no one in the house likes sweet frosting so even when I do make some, the cake or cupcake will be eaten just because it needs to be. Have you noticed the dearth of cupcakes on the blog:).
Yes, a very sweet chocolate frosting will be discarded too.

I found this Info-graphic about what happens to Elephants in Circuses, especially Ringling Brothers. This also happens to all the other animals in the Circus. They are all uprooted from their natural surroundings, beaten, abused, starved to train and kept locked up almost all their life. It breaks my heart whenever I see a story about an elephant suffering in the name of entertainment.
Same is applicable to any animals or fish in any performance business/theme parks etc.

Hi there – can you use whole wheat pastry flour or white whole wheat flour in place of the spelt flour? Any type of apples that work best? Thanks!
you can. use whole wheat pastry flour.
Just answered my question! Before I asked. Hubby will be tickled pink, since I seldom make sweets any more,
any sweet apples will work
Thanks so much! I was able to find spelt flour and used a fugi apple and it came out great! The omnivores had a second slice. My caramel sauce didn’t turn out as thick as in the picture, though it still tasted delicious!
Awesome! you can refrigerate the caramel for a bit and it will thicken considerably 🙂
This cake is spectacular! I made one the other day (with some mods) and it’s the first vegan cake my dad has actually enjoyed and called to comment on (after more than a year of sour attempts!). Thanks for this beauty! 😀 I used Alpro soy cream and a little less sugar so it didn’t really turn into a thickish caramel – I’m not sure if coconut cream acts differently – but ohmygoodness was it good. 🙂
i cant tell you how well received this little gem was tonite at our house. thank you so much for teaching us!! i used crystallized ginger and pecans in the batter and cooked apples (in juice) instead of raw apple and maple syrup. it came out absolutely perfect. next time i am doubling this for sure and sharing!!
My daughter is an allergy baby (dairy, soy, eggs, nuts, berries, melon, and citrus) so trying to find a “smash cake ” for her first birthday seemed impossible. Her birthday is at an apple orchard and I came across this recipe with help from an amazing girl from Happy Family brands. . . With a little altering to meet her needs, it was PERFECT!! I made it into individual mini cakes for the adults and other kids (to avoid cross contamination and an anaphylaxis reaction on her birthday) and everyone loved it. Thank you SO much!!!!!

That is amazing Jori. I am so happy that she celebrated her birthday with this cake. 🙂 Belated Happy Birthday to your daughter! xx
Great, thanks! The hubby has already eaten up half of it. 🙂 I’ll store the rest in the fridge.
Hi Richa,
I stumbled upon your blog while looking for apple recipes, and made this lovely cake today — turned out super delicious and moist. I used a mix of oat-almond-kamut flour. Love the recipe and love your blog. Thanks. 🙂 Wondering… how would you store this cake, in the fridge or just leave it out. Any suggestions?

Hi Richa, I happened to stumble upon your blog looking for some apple recipes online. Made this lovely cake today and it’s super delicious & moist. I used a mix of oat-almond-kamut flours. Very easy and quick recipe. Love it. Thanks! Wondering about how to store this, in the fridge or just leave it out. Any suggestions?
Hi Purvi,
I am so happy it turned out great:) Since there are fruit chunks in it, Store it in the refrigerator if you are not going to finish it within the same day. You can re-heat it in the oven or microwave(microwave with a cup half full of water).
Store in airtight container whether on the counter for the same day or in the refrigerator.
Stop! It’s all too good! I just thought I might like to be a vegan someday. And now I’m following your posts and I can’t possibly cook all of this delicious food.
So I started with Spiced Apple Cake because if it says “salted caramel” I cannot resist. And today is wheat splurge day.
This is the start of something big…for my health and for the planet.
Thank you!
