Vegan Spiced Apple Cake with Salted Caramel. Tried tested and loved. All whole grain made with spelt flour and drizzled with salted caramel or date caramel. Makes 1 8 inch cake pan
It is finally getting sunny in the Northwest and warm.. oh so nicely warm. I gave an ultimatum to hubbs to take time off his crazy work hours(most days I see him at 8 pm). There is only so many weeks of beautiful sunny and warm weather. Then it will get too hot and then it will get rainy again.. I think we should declare summer vacation in the Northwest for everyone. 🙂

I can never make pretty cakes with pretty frosting or icing. a- I am just not patient enough and good at the whole frosting/piping/icing process and b- no one in the house likes sweet frosting so even when I do make some, the cake or cupcake will be eaten just because it needs to be. Have you noticed the dearth of cupcakes on the blog:).
Yes, a very sweet chocolate frosting will be discarded too.

I found this Info-graphic about what happens to Elephants in Circuses, especially Ringling Brothers. This also happens to all the other animals in the Circus. They are all uprooted from their natural surroundings, beaten, abused, starved to train and kept locked up almost all their life. It breaks my heart whenever I see a story about an elephant suffering in the name of entertainment.
Same is applicable to any animals or fish in any performance business/theme parks etc.

That spiced apple cake sounds marvelous! It’s definitely one to keep in mind when it’s apple orchard season again!
Richa this looks so moist and delicious!!! Apples with caramel is such an amazing combination 🙂 Love it!
i love the drizzle of caramel on top of this cake! i hear you about making frosting. dayv and i aren’t fans of it, either, and i honestly hate making it. my favorite cupcake topping is chocolate ganache. so easy.
this cake looks spectacular, and i must say, i don’t think i’ve ever eaten apple cake before! same on me.
Thank you so much for sharing another squealingly amazing recipe, and for including the PETA graphic about elephants! More people need to learn about their plight in zoos and circuses…they don’t belong in either one, they will never thrive or be happy there. All of them need to be protected by moving them to superwonderful sanctuaries like the PAWS Sanctuary in California and The Elephant Sanctuary in Tennessee, and of course more needs to be done to protect them in the wild from poachers, land developers and deforestation. I love them so much!
Now I must make your cake…cuz I love spice apples too! 🙂
Hi Richa!
Do you think it would be possible to replace the spelt flour with a gluten-free mix?
Catherine
It should work. Just make sure the batter is not too dry or too wet. Someone on instagram tried with the same measurements using buckwheat flour instead of spelt. It came out great!
Thanks a lot, I am going to try it. It looks easy to make and good to eat!
I’m going to try this g-free, too. My favorite flour combo is sorghum, superfine brown rice, teff, plus a little tapioca starch or sweet rice flour to lighten it up a bit. CAN’T WAIT! This sauce sounds dreamy…..I just want to make it and dip apple slices in it! (Chris in Indiana)
I need to make this cake at once…
Poor elephants and all other circus animals. It will be great to have a worldwide ban on animals in circuses. But I’ve wondered about shows in theme parks which involve animals too – what are your thoughts on this?
I am sur eyou will like it Rajani!
the same problem is applicable to animals in theme parks as well. For example, whales in sea world are captured from the ocean and put in captivity. Read this about how Seaworld trained Tillikum by keeping it in dark small tanks for hours everyday. https://www.dailymail.co.uk/news/article-2308931/SeaWorld-Film-accuses-theme-park-turning-Tilikum-killer-Dawn-Brancheaus-death.html
I can imagine how lovely this cake has tasted!
How could anything drizzled in caramel NOT be a crowd pleaser 😉
I agree:)
just came out of the oven delicious!!! thnx!!!
Awesome!! Thanks for making it so quickly:) <3
apple cake is looking yummy and the pics are good.
