I love a veggie stir fry served with lots of nut butter sauce. Kid-easy recipes are great and this cookbook looks like it’s packed with them.
My favorite vegan meal is curried red lentils on quinoa with steamed kale.
We like zucchini noodle lasagna made with cashew ricotta
With it being grilling season, we are really playing on the grill. I had my picky teenagers and a couple of their friends over, along with family last weekend for a big ole’ movie and sleepover with grilling house party!
We had: Two different kinds of homemade veggie burgers, grilled veggie kabobs, and a french fry “bar”. It included three different types of fries (russet, sweet potato, and turnip), along with a toppings bar that included a “cheeze” sauce, tofu sour cream and scallions, veg chili, and coconut bacon. And a fruit salad with coconut cream for dessert.
All was vegan- not a single complaint! And not a single one of them was vegan! I so much hope to win this book- I discovered Dreena and her awesomeness back when she did an interview for Vegan Freak Radio years ago. I remember writing her with a question a short time later (I was a new vegan), and she took the time to write me the most glorious and kind response. LTEV and EDBV have been lifesavers for me. As my kids (and fussy partner) are finally open to more veggies and new foods, I could really use those family approved ideas. Sorry to write a book.
We like lasagna made using zucchini for the noodles and cashew ‘ricotta’ for the filling/
A difficult choice to make! Tacos with red rice, bean cassoulet, or baked mac n cheese are the meals I make most often when feeding multiple people (more than my husband and I, anyway).
Or sloppy joes. Mmmm.
My favourite vegan family meal is chickpea croquettes with mushroom gravy.
Veggie burgers with an assortment of toppings to allow choice!
Tempeh tacos! So good!
I like making potato wedges.
