I whipped up the Sneaky chickpea burgers within minutes. Burgers from the book below with a healthy helping of basil. Hubbs has been devouring these as snacks with his evening tea, while he preps for his weekend hike.

The cashew ginger sauce was obviously going to be a hit because you know, anything nutty and ginger sauce! I added some bean sprouts and carrots and healthy garnish of pepper flakes to round it off as a meal.

This book is for healthy vegan comfort food for families with kids. Hence, you will find a lot of simple and easy everyday recipes that are kid approved. There are also tips for meal planning, batch cooking, packing school lunches. The book does not have adventurous or exotic food or complex recipes. My favorite vegan family meal is mushroom coconut milk curry served over brown rice, sprinkled with fresh parsley.
Our favorite vegan meal is probably bean burgers of some sort (I make a huge variety!) and roasted vegetables. Even my 16 month old love it!
A fast, easy and delicious favorite is skillet lasagna.
