I forgot to mention the lentil loaf
Absolutely chickpea burgers! I love her ideas about family meals and school lunches too.
Tacos! Beans, rice, guac., salsa….
The biggest hit at the boy’s camp where I cook vegan/vegetarian meals, (as well as other special diet requests), is falafel on a bed on spiced butternut squash and fresh naan, topped with vegan tzatziki and nutritional yeast baked kale chips and pepitas!! We call it Falafel Tuesdays ~ for reasons you can imagine 😉
I love cooking up a big pot of vegan chili, corn chowder, or other soup on the weekend and having it for lunches and dinner all week.
Our favourite family vegan meal is actually another one of Dreena’s recipes. It’s the broccoli-teriyaki stirfry. My 6 year old, who is the pickiest eater in the world, gobbles up those marinated tofu cubes like there is no tomorrow! My 8 year old, enjoys helping me make the teriyaki sauce from scratch and always inhales the rainbow of broccoli and peppers in the dish. It is nourishing and delicious! And there is always room for a scoop of “So Delicious” ice-cream for dessert.:)
Creamy potato salad with a bean burger, great summer time meal.
Our favorite Vegan family meal is our grilled vegetable sandwich and anything soup!! We are so proud and excited to be Vegan for the animals and the planet!! WOULD LOVE TO WIN THIS BOOK!!!
Having a lot of difficulty posting!! I have too many favorites and can’t make a choice, but would love Dreena’s new book!
How to choose? I have many favorites! My most recent favorite is Miyoko’s Alfredo sauce. Would love Dreena’s new cookbook!!
