The cashew ginger sauce was obviously going to be a hit because you know, anything nutty and ginger sauce! I added some bean sprouts and carrots and healthy garnish of pepper flakes to round it off as a meal.

My daughters and my favorite vegan meal is fresh avocado & tomatoes over chickpeas (we could eat them every day, so I’m excited to make the Sneaky Chickpea Burgers), with brown rice, nutritional yeast and a splash of lemon. Simple, delicious. Thank you!

We love any kind of brunch meal – scrambles, waffles, pancakes etc.

Baked pastas or vegetable pies were always a big hit with my stepdaughters when they were growing up. It was tough because they weren’t raised as vegetarian or vegan, but they were pretty good about eating when they came to our house, and I always tried to cook food that would feel somewhat familiar. Proud to say both are now vegetarian, of their own choice. 🙂

  8. Jolie Bonnette says:

I’m pretty fond of the vegetarian chili my best friend makes. :-9 A little cornbread on the side and it’s divine!

Our go-to family meal is usually a coconut and red curry dish with any variety of ingredients, depending on what I find in the fridge. I just add coconut milk and red curry paste to the veggies on hand and some rice and you’ve got a good meal. Don’t forget the lime! We eat it at least once a week. I’d love to win this book – Dreena’s recipes are so good (I just made her chocolate chip cookies tonight)!
