we love a big pot of potato, chickpea and spinach curry with rice.
We love one pot meals! And burgers. Oh, and dessert. Food, we love food! Lol.
Scrambled tofu with veggies and spinach is my favorite go-to food. It is super easy to make and I think it works for breakfast, lunch or dinner just like eggs!! I would love to try out more kid friendly vegan foods.
Pretty much anything with peanut sauce and veggies – soba noodles, brussels slaw, brown rice, quinoa. Also big nourish bowls are a favorite – usually with some kind of tahini based sauce. Thanks for the recipes – I really enjoy this blog!
Our favorite dinner is vegan shepherds pie. I love mixing in whatever root veggies I have such as beets, and pumpkin or butternut squash also happen to be a favorite addition. Baked with cauliflower mash on top or cornbread, both are fantastic.
I like all vegan food but love tofu with spices the most and when I eat vegetarian like I did yesterday at dragon buffet I miss the vegan protein.
I love a home made Veggie curry with lemon Rice or simply a salad with lots of veg and a simple dressing lemony fat free dressing
My go to vegan meals are usually casseroles – I’m a big fan of one dish cooking, it makes a big batch, freezes easily, and many casseroles taste better the next day!
My favorite vegan family meal is definitely Thanksgiving. Celebration roast, mashed potatoes, mushroom gravy, garlicky kale, cranberry sauce, pumpkin pie, apple pie … not to mention all the tasty little appetizers we nosh on before the main meal! It’s a day of wonderful, plant-based food made even better by great company.
My favorite family vegan meal would have to be cauliflower steak. My parents, sisters, and even nephews not only love to eat them but would often request for me to make them. And if I do, the kids get involved in helping to cook. And if it’s vegan Filipino, we like to enjoy a veganized soup called “Nilaga”, full of veggies like napa cabbage, potatoes, green beans, carrots, cabbage, with seasoning like onions, peppercorns, and vegetable broth. Very comforting!
