One Pot Vegan Vodka Sauce Pasta from The Easy Vegan. Review + GIVEAWAY!

Ingredients
- 2½ cups 8 oz rotini pasta , (*use gluten-free pasta)
- ¾ cup mushrooms, chopped small
- ¾ cup shredded carrots
- ½ cup minced eggplant
- 2 cups 18 oz vegan marinara sauce or Mushroom Red Pepper Pasta Sauce (page 85)
- 2 cups plain nondairy milk, unsweetened
- 1 tablespoon 15 ml vodka, optional
- 2 teaspoons tomato paste
- 2 teaspoons nutritional yeast
- 1 teaspoon basil
- ½ teaspoon oregano
- ¼ teaspoon pepper flakes
- ⅛ teaspoon onion powder
- Salt, to taste
Instructions
- Add everything but the salt to a deep skillet and push the pasta underneath the liquid. Bring to a boil, then turn the heat down to medium-low and simmer until the pasta is al dente, about 10 minutes.
- Stir every few minutes so everything doesn’t stick to the bottom of the pan. Cook for about 9 minutes or until the pasta is tender. The timing will vary depending on the shape and kind of pasta you use. Taste and add salt if needed.

i’m all about roasted vegetables in the middle of the week
A bean burrito is MY quick go to dinner or snack – for the rest of the family, some sort of pesto pasta or marinara if we have it on hand.
This looks like a great book! I’m new to vegan and need to start a collection!
Favorite easy weekday meal is a stir-fry with leftover rice or mac and cheese. Better yet, vegan Chinese takeout from the place across the street! 😛 I want pumpkin hummus now fo sho.
Veggies, pumpkin puree, pasta… Throw in a pot with water to just barely cover. Simmer for 12 minutes!
I’m all about one-dish meals for weekdays – in hot weather I go for salads loaded with veggies, legumes, and nuts, and in cold weather I go for dals with lots of veggies thrown in.
My favourite Kathy Hester recipe is the Hummingbird Cake oatmeal from OATrageous Oatmeals.
I usually go with stir fry to use up veggies from the fridge.
My fave easy weekday meal is, in fact, pasta. And I just love vodka pasta sauce! Anything that can make healthy meals easier is a godsend.
My favorite hands down is a stir fry with brown rice or noodles and whatever veggies I happen to have in my fridge. Easy, quick, delicious, healthy and satisfying.
We like doing bowls with a grain, vegetable, green, protein and sauce. This week is quinoa, roasted broccoli and shallots, spinach, a balsamic baked tempeh from Oh She Glows Cookbook, and roasted garlic hummus. I cook everything on Sunday so that I don’t have to use the oven or stove during the week since the weather is so hot right now. During the winter, I love starting stew in the slow cooker in the morning and coming home from work to have the whole house smelling delicious. Thanks for the recipe and giveaway!
