One Pot Vegan Vodka Sauce Pasta from The Easy Vegan. Review + GIVEAWAY!

Ingredients
- 2½ cups 8 oz rotini pasta , (*use gluten-free pasta)
- ¾ cup mushrooms, chopped small
- ¾ cup shredded carrots
- ½ cup minced eggplant
- 2 cups 18 oz vegan marinara sauce or Mushroom Red Pepper Pasta Sauce (page 85)
- 2 cups plain nondairy milk, unsweetened
- 1 tablespoon 15 ml vodka, optional
- 2 teaspoons tomato paste
- 2 teaspoons nutritional yeast
- 1 teaspoon basil
- ½ teaspoon oregano
- ¼ teaspoon pepper flakes
- ⅛ teaspoon onion powder
- Salt, to taste
Instructions
- Add everything but the salt to a deep skillet and push the pasta underneath the liquid. Bring to a boil, then turn the heat down to medium-low and simmer until the pasta is al dente, about 10 minutes.
- Stir every few minutes so everything doesn’t stick to the bottom of the pan. Cook for about 9 minutes or until the pasta is tender. The timing will vary depending on the shape and kind of pasta you use. Taste and add salt if needed.

My favorite easy weekday meal is bean tostadas topped with guacamole, salsa, and if I have it , some vegan sour cream.
I love a big salad with leftover roasted or grilled vegetables on weeknights.
Salad. I love salads.
I used to make a great chicken vegetable soup with alphabet pasta. Then my daughter became vegan and I couldn’t make the soup for her anymore. I found a great instant bouillon “chicken flavor” but vegan. Now I can make an enormous pot of veg soup- carrots, celery, onions, broccoli, and corn mainly, with the bouillon for extra flavor. And, of course, lots of alphabet pasta for old times sake!
I am currently obsessed with chana masala. Throwing the chickpeas in a pressure cooker with some spices and letting the cooker do the work. I eat it with bread or frozen naan.
I love her white bean and tomatillo stew from her slow cooker book!

Spinach pasta! I’ll be posting the recipe for MoFo on the 3rd but it’s super easy. Pasta, onion, garlic powder, paprika, salt , pepper and some vegan butter or olive oil. Thanks for the chance to win!
An easy weekday meal? I go into the freezer and grab a jar of homemade tomato sauce and some Trader Joe “meat” balls. Then cook some spaghetti. Doesn’t get any easier than that.
Favorite quick weeknight meal: the puttanesca from My New Roots. But I couldn’t get by without Kathy’s oatmeal recipes. Looking forward to trying this vodka sauce and your masala chickpea bowl!
