One Pot Vegan Vodka Sauce Pasta from The Easy Vegan. Review + GIVEAWAY!

Ingredients
- 2½ cups 8 oz rotini pasta , (*use gluten-free pasta)
- ¾ cup mushrooms, chopped small
- ¾ cup shredded carrots
- ½ cup minced eggplant
- 2 cups 18 oz vegan marinara sauce or Mushroom Red Pepper Pasta Sauce (page 85)
- 2 cups plain nondairy milk, unsweetened
- 1 tablespoon 15 ml vodka, optional
- 2 teaspoons tomato paste
- 2 teaspoons nutritional yeast
- 1 teaspoon basil
- ½ teaspoon oregano
- ¼ teaspoon pepper flakes
- ⅛ teaspoon onion powder
- Salt, to taste
Instructions
- Add everything but the salt to a deep skillet and push the pasta underneath the liquid. Bring to a boil, then turn the heat down to medium-low and simmer until the pasta is al dente, about 10 minutes.
- Stir every few minutes so everything doesn’t stick to the bottom of the pan. Cook for about 9 minutes or until the pasta is tender. The timing will vary depending on the shape and kind of pasta you use. Taste and add salt if needed.

My favourite easy weekday meal is soup. I love to make vegetable soup or sweet potato chili with my crockpot!
My quick and easy go-to is a salad of what I’m craving with made-to-order healthy dressing. And the general rule: It has to be in the fridge or pantry. 🙂 Last night (it’s been a lonnnnggg weeek), I put together a mache, pickled beets (homemade!), red onion, walnut and apple salad with a quick vinaigrette I made from some fresh-raspberry infused red wine vinegar (homemade, too!), olive oil, oregano, and a touch of coconut sugar. It was huge, and really hit the spot!
I’d love to win this cookbook! I’m pretty good about food prep and making easy meals, but I’ve been lacking on recipe inspiration later and have been falling back on the same ol’ stuff (not that I’m complaining, but I do want to try to mix it up more). That said, one of my favorite go-to easy meals is veggie burgers. I like to make big batches and keep them in my freezer for quick dinners.

My easy weekday meal is smashed potatoes!
My go-to easy weekday meal is a stir fry with lots of veggies, brown rice, and tofu. I always have brown rice in my fridge or freezer as well as some premade organic tofu so all I have to do is cook some veggies in a wok and heat up the rice and tofu with some seasonings and soy sauce.
I’m so excited to have found this recipe too. My mother in law was looking for a vegan vodka sauce recipe for me!
