One Pot Vegan Vodka Sauce Pasta from The Easy Vegan. Review + GIVEAWAY!

Ingredients
- 2½ cups 8 oz rotini pasta , (*use gluten-free pasta)
- ¾ cup mushrooms, chopped small
- ¾ cup shredded carrots
- ½ cup minced eggplant
- 2 cups 18 oz vegan marinara sauce or Mushroom Red Pepper Pasta Sauce (page 85)
- 2 cups plain nondairy milk, unsweetened
- 1 tablespoon 15 ml vodka, optional
- 2 teaspoons tomato paste
- 2 teaspoons nutritional yeast
- 1 teaspoon basil
- ½ teaspoon oregano
- ¼ teaspoon pepper flakes
- ⅛ teaspoon onion powder
- Salt, to taste
Instructions
- Add everything but the salt to a deep skillet and push the pasta underneath the liquid. Bring to a boil, then turn the heat down to medium-low and simmer until the pasta is al dente, about 10 minutes.
- Stir every few minutes so everything doesn’t stick to the bottom of the pan. Cook for about 9 minutes or until the pasta is tender. The timing will vary depending on the shape and kind of pasta you use. Taste and add salt if needed.

My go to easy meal is tofu taco salads
One of my favorite easy weekday meals to make is Spicy Tofu Stirfry. Here is my recipe:
Smoked tofu, cubed
1 bunch Broccolini, cut in pieces with stems
1 Red Bell Pepper, juliened
large handful Cremi mushroms, slices
2 Tablespoons Arrowroot Powder
Coconut oil to cook with
2 Tablespoons Tamari
2 tablespoons water
1 Tablespoon Pure Maple Syrup
1 Teaspoon Toasted Sesame Seed Oil
1/2 teaspoon or more (to taste) Sambal (fresh pepper sauce
Put tofu cube in bag with Arrowroot and shake to coat. Stirfry in cocont oil (I use a wok) until nicely browned. Set tofu aside.
Stirfry veggies, when done add tofu. In a small dish or cup Added last 5 ingredients and combine. Toss with veggies and tofu and serve.

I always fall back on Chipotle Mac & Cheez when I need to whip up something quickly on a weeknight… looking forward to adding some new staples to my repertoire, though!

I wouldn’t say it is my favorite, but I tend to rely on plain pasta with sauce. It is quick and easy and the kids like it. I definitely need inspiration!
My favorite weekday recipe will probably have to be grilled pizza! I make a huge batch of pizza dough, portion it into single servings, then freeze it. If it’s ever a busy week day all I have to do is roll out the dough, throw it on the grill, and put whatever toppings I have in the fridge (including vegan cheese of course)! So delicious and easy!
Love Kathy’s Oatrageous Oatmeal book!! I use it to help with getting my husband’s cholesterol down. I’ll find out in a couple of weeks of it helped.
Well, I def want to make her pumpkin hummus! My go to fav weekday meal is crunchy quinoa salad with loads of veggies… so flavorful 🙂
My fave weekday meal is tri-color pasta salad. Lasts about a week or so.
In winter it has to be a quick noodle soup .. Vege stock base with loads of grated garlic and chilli, lemongrass splash of tamari then tofu fried off first in coconut oil with a little chilli, then loaded with whatever vege i have on hand….mushrooms (enoki being a fav)kale, bok choy, beans, mung bean sprouts..then topped with fresh corriander and fried shallots.
