Golden Milk Chia Pudding. Turmeric Milk, spices and orange in this chia seed pudding makes an amazing breakfast. Vegan Gluten-free Nut-free Soy-free Recipe. Just 5 Main ingredients!

This Chia Pudding is super easy and amazingly delicious. All the super foods chia seeds, turmeric, ginger. Filling and refreshing. The turmeric is mixed in after boiling it with coconut milk. Turmeric when cooked tastes better and less bitter. Warming the liquid also helps chia seed absorb faster and not get lumpy as they sit overnight. You can whisk in all the ingredients together without the extra step. Add spices and flavors of choice. I like to garnish these with candied ginger. Add other toppings of choice, more seeds, slivered nuts, granola , fresh fruit etc.

Golden Milk Chia Pudding with Orange & Ginger

Ingredients
- 1 can coconut milk , or 1 1/3 cup non dairy milk of choice
- 3/4 to 1 tsp turmeric
- 1/4 tsp ground ginger
- 1/4 tsp ground cinnamon, or cardamom or other spices
- a good dash of black pepper
- 1 tbsp orange preserves, or zest of half a small orange
- 2 tbsp maple syrup , or more to taste
- 1/4 cup + 2 tbsp chia seeds
Instructions
- Heat 1 cup of the coconut milk, turmeric, ginger, cinnamon, pepper over medium heat until just boiling. Take off heat.
- Add rest of the coconut milk, orange preserves, maple syrup and chia seeds and mix vigorously. Taste and adjust sweet, flavor if needed. Let it sit to cool completely for 10 to 15 minutes.
- Whisk the mixture vigorously again. The chia seeds should have expanded a bit and should distribute well. You can directly serve at this point or pour into serving containers and chill for more hydrated chia seeds and thicker pudding. Garnish with whipped coconut cream and candied ginger and serve.

Hello. I am a little confused. Do you boil all the ingredients together and then leave overnight?
yes the milk is heated so the chia absorbs the milk faster. then everything is chilled for a few hours. You can also mix the hia int the milk without heating and chill. Make sure to whisk the mixture a few times in the chilling time so chia seeds dont clump up.

We actually incorporated this pudding with soaked cashews, frozen mango and bananas (with additional almond milk) to turn this pudding into a great smoothie. Mmmmm

On another note, one of my dogs was rescued from a puppy mill when she was (maybe?) 2 years old. She was pregnant and this is what saved her life because had she not been with puppies she would have been euthanized due to not being socialized at all. She was a mess in so many ways and suffering physically and emotionally. I’ve had the benefit of her companionship for 14 years. I love her very much and she loves me, however she’s never fully recovered. She still startles when I reach out to touch her and she is not so keen on playing with our other dogs. I get it and I respect her nature. She’s a gentle soul with a great sense of humour who I would have never met if I had not taken a chance and adopted her. I agree with you: please adopt don’t shop.
Thank you for adopting her Sabine and giving her this wonderful life! We had a foster 6 month old, rescued from a puppy mill. He was super skinny and did not like people. After about a month when he did start to warm up to us and a bit with other people on the walks. Thats when people started showing interested as well and he got adopted. Our pom also must have faced some abuse as he still startles easily too.

I always wonder if you grind the chia seeds for these types of recipes or if you use them whole? If whole, do they soften up or make the pudding crunchy? Thanks!
Use them whole. They soak up the liquid as they sit and soften.
I make Chia Puddings all the time, they should not be grinned up they will soften and swell as they sit for a period of time, they are truly a Wonderful little seed, the pudding will be just like any other puddings after sitting for a while, nice and thick!! I always stir about 1/2 hour of putting in the fridge, so they don’t all cluster together at the bottom, this way they will be distributed through out the jar while setting, Enjoy!
