Another beautiful Vegan Laddoo. (Not a truffle or a cookie, but somewhere in between) 
This one has blueberries, oats, semolina and some cashews and raisins.

Blueberry Oats Semolina Laddoo

Blueberry oats Semolina Laddoo (Indian Sweet Snack Bites). These sweet treats are something in between a cookie and a truffle, so delicious and easy to make.

Ingredients 
 

  • 1/3 cup blueberries
  • 2 tablespoons raw granulated turbinado sugar or other equivalent sweetener
  • 1 teaspoon vegan butter
  • 6-7 raw cashews broken into small pieces
  • 3 tablespoons raisins
  • 3 tablespoons Semolina, (cream of wheat)
  • 2 tablespoons Oats
  • 1/4 teaspoon cardamom powder
  • 2-3 tablespoons water or almond milk

Instructions 

  • Blend and puree the blueberries with sugar and a Tablespoon of hot water till nicely pureed.
  • Add in the oats and blend again to get a thick paste.
  • In a pan, add the butter and heat on medium low heat till it melts.
  • Add in the cashew pieces and raisins and cook for 2 minutes till cashews start to turn golden.
  • Add in the semolina in the pan and roast for 2-3 minutes, stirring occasionally, on medium low heat.
  • Add in the cardamom powder and blueberry and oats puree and mix well stirring continuously.
  • If the mixture doesnt come together and is too dry, then add a little water or almond milk, Add some coarsely ground oats if too runny.
  • Take off the heat after 2-3 minutes of continuous stirring, when the mixture looks like a dough.
  • Let it sit and cool for 5 minutes.
  • Shape the mixture into small spheres or flats and serve! I got about 8 small inch rounds! Store in airtight container in the refrigerator for a few days.

    Hi Rich, These look great! I’ve never made laddu before but have been strangely possessed to try blueberry lad (especially when I thought it was an original idea. I did think I would have to use freeze dried berries but I see you used fresh so I will reconsider. My real question is about the oats; are they just for nutrition or do the serve some other function that makes them essential to the recipe?

      they absorb some of hte moisture, you can omit them if using dried blueberries

    What’s the texture of the laddus supposed to be like- like a suji halwa where the grains are virtually indistinguishable or more grainy? I made this recipe with raspberries (because that’s what I had on hand), and although the mixture sticks and is easily shaped into balls, the texture is weirdly chewy, not like a halwa at all. Should I have cooked it a bit longer or added more water/milk?

      hmm, i am not sure why it got chewy. prob the raspberry seeds?

        That might be it! It didn’t matter though, I shared them with some friends and they loved the laddoos! Next time, I will stick to the original recipe and make these with blueberries. Thanks for this delicious spin on laddoos!
