A somewhat Mediterranean Pizza for day 2. A thin Spelt crust, topped with baby greens, mushrooms, olives, pretty golden tomatoes, herbs and some almond feta.

I made Ricki’s Almond feta with parsley and thyme for this pizza. I used raw almonds and soaked them overnight. Peeled some of them and left some unpeeled (I am z lazy ;), hence the brown flakes in my cheese. With all the herbs and added sourness, it does taste fabulous. It is not exactly a feta though. 

Crusty I used some of the feta on the pizza and used some to make stuffed savory french toasts. The toasts were an absolute hit at breakfast. Here is the recipe for the Samosa savory toasts. Press some feta between 2 slices instead of the potato filling, coat in the savory batter and pan fry them. nom nom

Pizza Steps:In a bowl, mix warm water, sugar and yeast  and let sit until frothy(10 minutes)
Add the flours, salt, herbs and evoo.

Mix and knead for a minute, spray water on top and cover with a damp towel. 

Let rise for 1.5 hours. Listen to some music, walk the dog. Clean the kitchen, setup props, yell at the buyers who are giving an inflated price for the house you like, think of more pizzas to make..

Use some spelt flour and oiled hands to gather the dough and knead for 3-4 minutes.
Roll this dough out to as thin as possible on parchment.
Brush evoo on top. Arrange the baby greens, golden cherry tomatoes, olives and mushrooms. Sprinkle feta liberally. 

Sprinkle the spices and bake in preheated 410 degrees F for 12-13 minutes. 
Broil on Lo for half a minute.
Take out, top with fresh baby greens/chopped basil, cut and serve.

Ingredients 
 

Crust

  • 1/4 cup warm water
  • 1 teaspoon active yeast
  • 2 teaspoons raw sugar
  • 1/3 cup Spelt flour
  • 2 Tablespoons bread flour
  • 1/4 teaspoon salt
  • a generous pinch of garlic powder, dried parsley, dried basil and paprika
  • 1 Tablespoon EVOO, extra virgin olive oil
  • 2-3 tablespoons spelt flour to work the dough

Toppings

  • 1 Tablespoon evoo
  • 1 recipe Ricki's Almond feta
  • baby kale and spinach
  • sliced mushrooms
  • kalamata olives
  • golden cherry tomatoes, halved
  • 1 teaspoon parsley
  • 1/4 teaspoon cumin powder
  • black pepper to taste, Or use a light sprinkle of dukkah spice blend

Instructions

  • Sprinkle the spices and bake in preheated 410 degrees F  / 210ºc for 12-13 minutes.
  • Broil on low for half a minute.
  • Take out of the oven, top with fresh baby greens/chopped basil, cut and serve.

    The discovery of good store-bought tofu feta has made me quite lazy. I’m really digging the look of the almond version though! Any extra effort for results that are so delicious would be completely worthwhile… And probably even less expensive, too.

      for sure less expensive. i like some of the options, but they are always out of stock in stores here. seattle is getting very vegan oriented lately 🙂 so as well try some at home:)
