A somewhat Mediterranean Pizza for day 2. A thin Spelt crust, topped with baby greens, mushrooms, olives, pretty golden tomatoes, herbs and some almond feta.

I cant believe the amazingness that so many bloggers are bringing to Mofo. Keep an eye out on VeganMofo Page for fun giveaways and highlights. I will probably do a round up of some my faves too every week.

For Gluten-free Crust options see here.
I made Ricki’s Almond feta with parsley and thyme for this pizza. I used raw almonds and soaked them overnight. Peeled some of them and left some unpeeled (I am z lazy ;), hence the brown flakes in my cheese. With all the herbs and added sourness, it does taste fabulous. It is not exactly a feta though.
Crusty
I used some of the feta on the pizza and used some to make stuffed savory french toasts. The toasts were an absolute hit at breakfast. Here is the recipe for the Samosa savory toasts. Press some feta between 2 slices instead of the potato filling, coat in the savory batter and pan fry them. nom nomPizza Steps:In a bowl, mix warm water, sugar and yeast and let sit until frothy(10 minutes)
Add the flours, salt, herbs and evoo.
Mix and knead for a minute, spray water on top and cover with a damp towel.
Let rise for 1.5 hours. Listen to some music, walk the dog. Clean the kitchen, setup props, yell at the buyers who are giving an inflated price for the house you like, think of more pizzas to make..

Use some spelt flour and oiled hands to gather the dough and knead for 3-4 minutes.
Roll this dough out to as thin as possible on parchment.
Brush evoo on top. Arrange the baby greens, golden cherry tomatoes, olives and mushrooms. Sprinkle feta liberally.

Sprinkle the spices and bake in preheated 410 degrees F for 12-13 minutes.
Broil on Lo for half a minute.
Take out, top with fresh baby greens/chopped basil, cut and serve.
Ricki’s Almond feta recipe variation: I added parsley and thyme for this pizza. I used raw almonds instead of blanched and soaked them overnight. Peeled some of them and left some unpeeled, hence the brown flakes in my cheese. The rest of the recipe is the same.

I love how there are herbs in the crust, herbs in the feta, and the whole pizza gets topped with more herbs. Lots of flavor everywhere!
you figures my tastebuds out 😉
I love the way you load toppings on your pizza- that’s what I do, too. The more toppings the better! I hate when restaurants scatter a few mushrooms and a couple of pieces of broccoli on my pizza. I want TOPPINGS!
😀 i do too! if my crust can hold it, load it!
YUMMY Richa! This looks so good – I think your site is my fave so far of the blogs I frequent for MoFo – there is always appetite for pizza 🙂 I am loving the spelt crust on this one!
Thanks Shira!:) keep dropping by:) its a crazy month but i will try to drop by your space too!
Watching this space .. its pizza month yay!!
Love those orange golden tomatoes on top.. and have to make this almond feta!!
YUM!
I need to try spelt! It’s probably the only grain I haven’t tried baking with. Weird eh? So yummy Richa, but then again, I didn’t expect anything less! Love your new badge!!!
Thanks somer!
Another fantastic recipe. I LOVE this blog…I only just recently discovered it and can’t wait to use these recipes in the near future. I am clearing out my rss feed reader so that I can fit more good quality vegan food blogs in and yours is right up there 🙂 Cheers for all of your hard work and thank you from the bottom of my little vegan heart for making these fantastic recipes. We don’t have a lot of vegan produce here in tiny Tasmania at the ends of the earth and so I have to make my own and I love it when I can find recipes from scratch 🙂
Thank you narf7.. 🙂 thank you for the kind words. the appreciation is what keeps me going!:)
Yum! Would love to try this. The almond feta looks so pretty too!
I will eat your “somewhat” haha Meditterranean pizza anyday. I had been planning on making almond feta during this MoFo as well, but your recipe is delicious looking.
This is probably the most beautiful pizza I’ve even seen. It almost looks too good to eat. Almost.
it didnt last too long inspite of the beauty:)
